Knead masa harina, warm water and salt to make a soft dough.
Divide the dough into 6 pieces and roll them into thick disks.
Cook the disks in a dry pan for 2 minutes on each side, fold the edges up with your fingers while they are hot.
Cut the potatoes into small cubes, boil them for 10 minutes and drain.
Fry the beef sausage, onion and cumin in a pan for 6 minutes.
Add the potatoes and stir together for 5 minutes without mashing.
Crispy the sopes bases in a little oil for 1 minute on each side.
Add veal sausage with potatoes, lettuce, sour cream, feta cheese, salsa verde and lime to the bases and serve.
💡 Tip: Crimping the edges of the sopes while the dough is hot easily creates a hole where the filling fits without overflowing.
