Slice the plantains lengthwise and soften them in olive oil for 3 minutes.
Saute the onion and garlic for 4 minutes, add the ground beef, and cook for 8 minutes.
Add the tomato puree, olives, raisins, salt, and black pepper and thicken the filling for 7 minutes.
Layer the plantain, beef filling, and cheese in the baking dish in order.
Pour the beaten eggs over the top so the layers do not fall apart when sliced.
Bake the pinon tray in a 185?C oven for 22 minutes.
Rest the tray for 10 minutes after baking, then cut it into squares.
