Wash the spinach in plenty of water, chop coarsely, and leave in a strainer.
Rinse the rice and soak it in warm water for 10 minutes.
Dice the onion and soften it in olive oil for 5 minutes.
Add the tomato paste and fry for 1 minute, until fragrant.
Add the spinach to the pot in batches, letting each batch wilt lightly.
Add the drained rice, hot water, salt, and black pepper.
Cover and cook over low heat for 16 minutes, then rest for 5 minutes once the rice is tender.
