Slice the leeks into thin rings and chop the dill.
Cook the leeks with half the olive oil for 14 minutes until their liquid evaporates.
Cool the leeks for 10 minutes, then mix with the white cheese, eggs, dill, salt, and black pepper.
Oil the tray and lay down half the pastry sheets, brushing olive oil between them.
Spread the leek filling and cover with the remaining pastry sheets the same way.
Score the top of the pie and brush with the remaining olive oil.
Bake the prassopita in a 185°C oven for 34 minutes until browned.
