Melt the granulated sugar and water in a small pan until amber.
Pour the caramel into the mold and spread it over the base.
Whisk the condensed milk, milk, eggs, and vanilla until smooth.
Strain the custard mixture into the caramel-lined mold.
Place the mold in a tray filled with hot water.
Bake the quesillo at 170°C for 50 minutes.
Cool completely, unmold upside down, and serve.
💡 Tip: After pouring the caramel into the mold, swirl it quickly; as it cools, it hardens and will not spread evenly across the base.
