Grate the onion and squeeze out its juice.
Knead the ground lamb, tail fat, onion juice, salt, cumin, and black pepper.
Knead the mixture firmly for 8 minutes, pressing by hand so the fat spreads through the meat.
Wrap the mixture around skewers as thin 7 cm long koftes.
Arrange the tomatoes and green peppers along the edge of the grill.
Cook the koftes on a hot grill for 10-12 minutes, turning, and serve with tomato, pepper, and parsley.
