Soften the onion in butter for 5 minutes, add the cumin and paprika and fry for 1 minute.
Add the ground beef and cook for 8 minutes, until it releases and reabsorbs its liquid, then season with salt.
Blend the corn kernels with the milk and basil into a thick puree, then boil it in a separate pan for 3 minutes.
Spread the pino filling in a baking dish; arrange the shredded chicken, sliced olives, raisins and boiled egg slices on top.
Spread the corn puree over the top and dust lightly with powdered sugar.
Bake at 190°C for 30 to 35 minutes, until the top is golden and caramelized.
💡 Tip: If the pino filling has not fully reduced before the corn puree is spread on top, the layers fall apart. Powdered sugar caramelizes the surface; a traditional paila, or terracotta bowl, gives a better result.
