Cut the chicken, beef, tofu, and vegetables into bite-size pieces and thread them onto separate skewers.
Clean the shrimp and thread them onto skewers.
Crush the garlic and ginger, then put them in a sauce pot.
Add the peanut butter, coconut milk, soy sauce, tamarind, sugar, chili paste, sesame oil, and water.
Cook the sauce for 12 minutes, stirring until it thickens.
Dip the skewers into the boiling sauce and cook chicken and beef for 5 minutes, shrimp and vegetables for 2 minutes.
Keep the sauce warm over low heat and serve the skewers in batches.
💡 Tip: Keep protein and vegetable skewers separate; their cooking times differ, so they are easier to control in the sauce.
