Cut the stale bread into small cubes and soak with hot milk for 10 minutes.
Soften the onion in butter for 5 minutes.
Add the onion, eggs, parsley, nutmeg, salt, and black pepper to the soaked bread and knead gently.
Shape the mixture into 8 dumplings, wetting your hands so the surfaces do not crack.
Bring water to a boil in a wide pot, lower the heat, and cook the semmelknoedel for 15 minutes without boiling hard.
Lift the dumplings out with a slotted spoon, rest for 5 minutes, and serve.
