Boil the sugar, water, and lemon juice for 12 minutes and leave the syrup to cool.
Knead a soft dough with the flour, egg, yogurt, half of the butter, and salt.
Rest the dough for 25 minutes so it stretches without tearing at the edges when rolled like yufka.
Mix the walnuts, hazelnuts, almonds, raisins, and cinnamon into a coarse filling.
Roll the dough like a large yufka sheet, spread the filling, and close it like a bundle.
Melt the remaining butter and brush it over the dessert.
Bake the dessert at 180°C for 35 minutes, until browned.
Pour the cold syrup over the hot dessert, wait 45 minutes for it to absorb, then slice.
