Open the leek layers, wash them under running water, and slice into rings.
Cut the potatoes and carrots into large cubes and dice the onion.
Soften the onion and leeks in olive oil for 8 minutes.
Add the potatoes, carrots, vegetable stock, salt, and black pepper.
Cook the soup for 24 minutes, until the vegetables are tender.
