Boil the potatoes in salted water with their skins on for 12 minutes, then peel them and cut into 2 cm cubes.
Finely chop the onion and cook it in butter in a pan for 5 minutes, until lightly pink.
Add the boiled potatoes to the pan, sprinkle with salt, black pepper, and red pepper flakes, and turn over medium heat for 4 minutes to form a light crust.
Sprinkle in the sumac, stir for 1 more minute, and remove from the heat.
Portion onto a serving plate, top with parsley and extra sumac, and serve hot.
💡 Tip: Do not overcook the potatoes while boiling; 12 to 14 minutes is enough to keep the inside in pieces. Add the sumac at the end so the heat does not turn it harsh.
