Melt the butter and olive oil together in a pan; soften the chopped onion over medium heat for 3 to 4 minutes.
Crack the eggs one by one over the onion, taking care not to break the yolks.
Sprinkle 1 tablespoon water over the top and close the lid; cook over low heat for 4 to 5 minutes, until the whites set.
Open the lid and sprinkle sumac, red pepper flakes, dried mint, and salt over the top.
Close the lid again, remove from the heat, rest for 1 minute, and serve immediately with hot bread.
