Coarsely crush the walnuts. Mix the tahini, melted butter, and sugar in a bowl until you have a smooth filling.
Open the yufka sheets on the counter, spread each with the tahini filling, and sprinkle with walnuts and cinnamon.
Roll up the yufka sheets and place them seam side down on a greased tray. Brush the tops with beaten egg yolk.
Bake in an oven heated to 190°C for 22 minutes, until the tops are golden.
Let the pastries rest for 5 minutes after they come out of the oven.
Slice, transfer to a plate, dust with powdered sugar, and serve warm.
