Whisk the eggs, milk, salt, and half the granulated sugar in a deep bowl for 1 minute, until smooth.
Lay the stale bread slices in the mixture for 30 seconds, turn, and soak the other side for 30 seconds more.
Heat the neutral oil in a wide pan over medium heat and melt the butter in it; add the bread once the foam settles.
Cook the bread over medium heat for 4 minutes, until the first side turns golden; flip and cook the other side for 4 minutes.
Transfer to paper towel to drain excess oil; mix the remaining sugar with cinnamon and sprinkle over the slices.
Serve hot; finish with molasses, honey, or powdered sugar if desired.
