Combine the flour, water and salt in a mixing bowl and knead into a smooth dough, then cover and rest for 15 minutes.
Mash the white cheese with a fork and mix it with finely chopped parsley, sumac, black pepper and red pepper flakes for the filling.
Divide the dough into balls and roll each one as thinly as yufka.
Heat a nonstick pan or griddle over medium heat and cook each yufka for 2 minutes on each side, stacking the cooked sheets.
