For the syrup, boil the sugar and water for 10 minutes, add the lemon juice, and let it cool.
Mix the milk, water, yeast, and sugar and let stand for 5 minutes.
Add the flour and salt to make a pourable batter.
Let the batter rise for 20 minutes.
Pour small rounds of batter into an ungreased pan and cook only one side, until the surface is full of bubbles.
Fill the cooked rounds with walnuts and cinnamon and seal the edges.
Fry the filled pastries in hot oil for 3 minutes, until golden.
Place the fried pastries in the cold syrup and let them soak for 5 minutes.
💡 Tip: Cooking only one side of the batter rounds keeps the inner surface soft enough to seal; if both sides cook, the edges will not stick.
