Rinse the sushi rice until the water runs clear.
Cook the rice with water for 18 minutes and rest for 10 minutes.
Dissolve the rice vinegar, sugar and salt and fold into the hot rice.
Cook the egg as a thin omelet and cut into strips.
Slice the salmon thinly on the diagonal with a sharp knife.
Wet your hands with vinegared water and divide the rice into small balls.
Place salmon, shrimp, egg or cucumber on each rice ball and shape tightly with plastic wrap.
Serve with sesame seeds, soy sauce, wasabi and pickled ginger.
