Peel the shrimp, leave the tails on, and clean the back vein.
Make three small cuts on the inner side of each shrimp and straighten them.
Set aside 2 tablespoons of the flour for drying and coating the shrimp.
Whisk the egg with the ice water, then briefly mix in the flour, cornstarch, and salt.
Heat the vegetable oil to 175°C.
Dip the shrimp first in dry flour and then in the cold batter, and fry for 2 to 3 minutes.
Rest the tempura ebi on a wire rack for 2 minutes and serve with soy sauce and grated radish.
