Devein the shrimp and thinly slice the pumpkin and eggplant.
Simmer the soy sauce, apple juice, sugar, and 0.3 cup water for 4 minutes to make the sauce.
Mix the flour, egg, cold water, and salt briefly into a tempura batter.
Heat the oil to around 175°C, dip the vegetables in the batter, and fry for 3 minutes.
Dip the shrimp in the batter and fry 2 minutes until pink and crisp.
Arrange the tempura over bowls of rice, drizzle the sauce little by little, and serve immediately.
