Simmer the soy sauce, brown sugar, rice vinegar, grated ginger and garlic in a small pan for 5 minutes until thickened.
Shape the beef into four patties and season with salt and black pepper.
Sear the pineapple rings in a hot pan for 2 minutes per side.
Heat a cast iron pan above 230°C and cook the patties for 3 minutes.
Flip the patties, brush with teriyaki sauce and cook for 3 more minutes.
Toast the burger buns and place lettuce on the bottoms.
Close the burgers with the patty, grilled pineapple and 1 tablespoon of sauce.
