Boil the chicken carcass for 10 minutes, discard the water, and rinse.
Simmer the chicken stock gently with fresh water for 2.5 hours.
Steep the tare with soy sauce, apple juice, kombu, and katsuobushi for 10 minutes.
Boil the eggs for 7 minutes, peel them, and marinate in a little tare for 1 hour.
Strain the stock and keep it hot.
Boil the ramen noodles for 2 minutes.
Put tare in the bowls and loosen it with the hot chicken stock.
Serve with noodles, chashu, marinated egg, nori, and spring onion.
💡 Tip: Putting the tare in the bowl first lets it spread evenly with the hot broth. Use the egg after 1 hour for a mild flavor; for a darker color you can leave it overnight in a separate container.
🍽️ Serving suggestion: Keep the noodles firm and serve right away with chashu, egg, nori, and spring onion.
