Put the milk, semolina, sugar, and bitter orange zest in a pot.
Cook over medium heat for 10 minutes, stirring constantly.
After removing from the heat, add the bitter orange juice and stir, without making the zest aroma bitter.
Pour the dessert into a moistened mold and smooth the surface so the base does not stick.
Chill for at least 2 hours so the semolina releases cleanly from the mold.
