Wash the short grain sushi rice until the water runs clear.
Cook the rice with water and let it rest covered for 10 minutes.
Melt the rice vinegar, sugar and salt and mix it into the hot rice.
Remove the seeds of Umeboshi plums and grind the flesh into paste.
Prepare shiso leaves and cucumber into thin strips.
Spread the rice on the nori, put umeboshi, shiso and cucumber in the middle and roll it up.
Cut the roll with a wet sharp knife and serve with soy sauce and pickled ginger.
💡 Tip: Extracting and crushing the umeboshi beans completely prevents the roll from falling apart when cut.
