Rinse the rice until the water clears and drain it for 20 minutes.
Cook the rice and let it rest, covered.
Fold vinegar, sugar and salt into the hot rice.
Cut the nori into 3 cm strips.
Make oval rice bases and wrap each one with nori.
Seal the join with a grain of rice and leave the top hollow.
Set the uni on top without crushing it and serve with pickled ginger and a little soy sauce.
