Wash the raisins and dried apricots in warm water for 10 minutes and drain; cut the apricots into 1 cm pieces.
Put 5 cups water, the raisins, and the dried apricots in a pot; bring to a boil over medium heat.
Once boiling, add the cinnamon stick and cloves, then cook over low heat for 20 minutes so the fruits swell and release their juice.
Turn off the heat, add the optional granulated sugar and lemon zest, cover, and rest for 30 minutes.
Chill in the refrigerator for at least 1 hour and serve cold; you can remove the cinnamon stick and cloves while plating.
💡 Tip: Apricot kernels contain amygdalin, which can turn into cyanide during digestion; this recipe does not use the kernels. After cooking the compote, remove it from the heat and rest it covered so the fruit releases its juice and the aroma deepens.
