Combine the dry mixture and almond flour in a bowl.
Add the cold butter pieces and work to a sandy texture.
Bring the dough together and chill for 40 minutes.
Take small pieces of dough and shape them into crescents.
Bake the cookies at 175°C for 12 to 14 minutes.
While still warm, gently coat them in the vanilla sugar.
Let them rest completely on a wire rack.
