Divide the Wagyu beef into 4 patties and shape without kneading.
Heat a cast iron pan above 230°C.
Season the patties with salt and black pepper and cook for 2.5 minutes per side.
Add cheddar cheese and melt for 1 minute.
Toast the cut sides of the brioche buns for 1 minute.
Mix mayonnaise and Dijon mustard and spread on the buns.
Serve the burgers immediately with lettuce, patty and pickles.
💡 Tip: Do not press the Wagyu patty too much, so the melting fat stays in the burger.
