Put the bone-in lamb, onion, bay leaf, fresh thyme, and water in a large pot.
Bring the broth to a boil, skim the foam from the surface, and cook over low heat for 95 minutes.
Remove the meat from the bones, strain the broth, and return it to the pot.
Cut the potatoes, carrots, and turnip or celery root into large pieces.
Add the vegetables to the broth and cook for 28 minutes, until tender.
Slice the leeks thickly and add them to the pot with the lamb.
Cook the soup for 12 minutes, keeping the leeks slightly firm.
Add the salt, black pepper, and chopped parsley, then serve hot.
