This Mugla-style flatbread fills soft bazlama with curd cheese and olives for a fast pastry.

Mash the curd cheese with a fork and mix it with chopped olives and olive oil.
Remove the seedy, watery center of the tomato slices so the inside of the flatbread does not become wet.
Open the flatbreads through the middle and divide the curd filling and tomato inside.
Close the flatbreads and heat them in a lightly oiled pan for 4 minutes.
Turn and brown the other side for 3 minutes, then serve the hot flatbread with fresh thyme.
💡 Tip: Resting the flatbread for 30 seconds before cutting helps keep the filling from flowing out.
