Prepare the syrup in advance: boil the sugar and water for 15 minutes until thick, add the lemon and boil for 2 more minutes, then cool completely.
Knead the flour, baking powder, salt, sugar, eggs, yogurt, and water until you have a soft dough.
Cover the dough and let it rest for 30 minutes so the gluten relaxes.
Heat the vegetable oil to 170°C. With wet hands, pinch off walnut-size pieces and drop them into the oil.
Fry for 6 to 8 minutes, until golden, then lift out with a strainer.
Dip the hot zingils in the cold syrup for 2 to 3 minutes, drain, and transfer to a serving plate.
💡 Tip: The syrup must be cold and the dough hot. Hot syrup keeps the dough from absorbing properly and softens the outer crust, a shared rule for southeastern syrup desserts such as lokma and tulumba.
