Coarsely grate the brined cucumbers and dice the potatoes and carrots small.
Soften the onion in butter for 5 minutes.
Add the potatoes, carrots, and stock, then cook for 18 minutes.
Add the grated cucumber and brine.
Boil for 8 more minutes.
Temper the sour cream with one ladle of hot soup and stir it into the pot.
Serve hot with dill and black pepper.
