Add the dry yeast and granulated sugar to the warm water and wait 5 minutes, until foamy.
Put the flour, salt, neutral oil, and yeasted water into a large bowl, then knead for 8 minutes until you have a smooth, soft dough.
Cover and let rise in a warm place for 60 minutes, until doubled.
Deflate the dough, divide it into 2 equal pieces, and roll each into an oval.
Lightly mix the white cheese with tahini without fully blending it, so it stays marbled, then add the finely chopped parsley.
Spread the filling down the center of each pide, fold the edges to shape, and sprinkle sesame seeds on top.
Bake in a preheated 220°C oven for 14 minutes, until browned, and serve hot.
💡 Tip: The dough should rise for at least 60 minutes, since a short fermentation weakens the open crumb. Do not blend the tahini fully into the cheese, leave the filling marbled.
