Knead the ground beef with the egg white, cumin, black pepper, and half the salt, then shape small meatballs.
Crush the garlic and grate the onion.
Sear the lamb in olive oil for 7 minutes.
Add the onion and garlic, and turn for 3 minutes without burning.
Add the water, chickpeas, almonds, and remaining salt, and cook the lamb for 35 minutes.
Add the meatballs to the pot and cook them in the sauce for 12 minutes.
Rest the mtewem for 6 minutes and serve with its sauce.
💡 Tip: Turn the garlic briefly in oil without burning it, a longer fry makes mtewem taste bitter.
