Knead flour, water, olive oil and salt into a smooth unleavened dough.
Rest the dough for 15 minutes.
Mix the cream, strained yogurt, nutmeg and black pepper.
Slice the onion into very thin half-moons and cut the beef bacon into strips.
Divide the dough into 4 pieces and roll each very thinly.
Heat the oven with the tray to 280°C.
Spread creamy sauce, onion and beef bacon over the dough.
Bake the crisp tarts for 7 to 8 minutes, until the edges brown.
💡 Tip: Rolling the dough almost paper-thin gives tarte flambee its crisp character.
