Dice the chicken breast, season it with salt and pepper, and saute it in olive oil for 5 minutes.
Add the finely chopped onion and cook for 4 minutes. Add the mushrooms, carrot, and peas and saute for 6 more minutes, keeping the vegetables firm; sprinkle with optional thyme.
Spread the filling on a wide plate and let it cool completely, at least 30 minutes.
Open the puff pastry sheets and place 2 tablespoons of filling in the center of each. Fold the edges over into square parcels, place them seam-side down on the tray, and brush with egg yolk.
