Hold the dock leaves in boiling water for 1 minute, then transfer them to cold water.
Wash and drain the bulgur and rice.
Finely chop the onions and parsley, then mix with the ground beef, bulgur, rice, tomato paste, mint, salt, and black pepper.
Place filling in the center of the leaves, roll loosely, and arrange in a pot.
Add the olive oil and hot water, then cover with a plate.
Cook the stuffed leaves over low heat for 50 minutes.
Rest for 10 minutes and serve with yogurt.
