Put the bone-in lamb in a pot with water and salt.
Skim the foam when it boils and cook the meat over low heat for 70 minutes.
Cut the tandir breads into bite-size pieces and dry them in a 180°C oven for 6 minutes.
Slice the onions thinly and soften them in vegetable oil for 8 minutes.
Add the fresh cemen paste to the onion and stir for 2 minutes, until fragrant.
Remove the meat from the bones, shred it, and spread it over the bread.
Pour over enough hot meat broth to moisten the bread, then place the cemen onions on top.
Sprinkle with parsley and red pepper flakes and serve before the bread falls apart.
