Rub the diced lamb with half of the salt and the black pepper.
Brown the meat in the olive oil in batches for 8 minutes.
Slice the onions into half moons, finely chop the garlic, and add them to the pot.
Soften the onion and garlic with the meat for 6 minutes.
Add the tomato paste, hot water, allspice, and remaining salt, then cook the meat over low heat for 45 minutes.
Cut the quinces into large wedges and add them to the pot with the chickpeas and pomegranate molasses.
Cook the kumbursiye for 25 minutes, until the quince is tender, then serve hot.
