Whisk the yogurt, egg, baking powder, salt, and warm water in a large bowl.
Add the flour gradually and knead a soft dough that does not stick to your hands.
Cover the dough and let it rest for 40 minutes so it rolls out easily.
Roll the dough out on a floured surface to half a centimeter thickness.
Cut the rolled dough into small squares or diamond shapes.
Heat the vegetable oil to 175°C and fry the mafis for 3 minutes, until puffed and browned.
Transfer the fried mafis to paper towels and serve hot.
💡 Tip: Shake excess flour off the dough pieces before dropping them into the oil; if flour burns in the oil, the second batch of mafis turns dark.
