Mix the milk, yeast, and 1 tablespoon of the sugar, then let it foam for 8 minutes.
Knead a soft dough with the flour, eggs, salt, yeasted milk, and half of the butter.
Rest the dough for 75 minutes, until risen.
Melt the chocolate, cocoa, cinnamon, remaining sugar, and remaining butter over low heat, then cool until warm.
Roll the dough into a rectangle and spread the chocolate filling over the surface.
Roll the dough into a log, cut it lengthwise, and twist the two pieces together.
Rest the babka dough in the tin for 30 minutes.
Bake the babka at 180°C for 40 minutes, until cooked through.
