Rub the beef fillet with salt and black pepper and sear in a hot pan for 5 minutes.
Cool the fillet for 15 minutes and coat with mustard.
Chop the mushrooms very finely and cook with butter and thyme for 12 minutes until dry.
Lay pastrami slices on plastic wrap and spread the mushroom filling over them.
Wrap the fillet tightly with the pastrami filling and chill for 20 minutes.
Roll the puff pastry on a floured surface and wrap the meat.
Brush with egg yolk and bake at 200°C for 25-30 minutes.
Rest for 10 minutes and slice.
