Mix the flour, dry yeast, sugar, and salt in a large bowl.
Add the warm water little by little and knead a soft dough.
Let the dough rise for 60 minutes.
Break walnut size pieces from the risen dough and open them slightly by hand.
Heat the vegetable oil and fry the bisi for 3 to 4 minutes, until both sides brown.
Transfer the bisi to paper towels and serve hot.
💡 Tip: Do not make the dough stiff with too much flour; dough that sticks slightly to the hand fries puffier and softer inside.
🍽️ Serving suggestion: Serve bisi hot, with white cheese, olives, and tea if desired for a breakfast tray.
