Cool the boiled potatoes completely and slice them 0.5 cm thick.
Cut the beef pastrami into small pieces.
Heat the oil in a wide pan and fry the pastrami for 4 minutes.
Add the onion and saute for 5 minutes, until softened.
Spread the potatoes in one layer and cook for 12 minutes, until browned on both sides.
Add the butter, salt, and black pepper, and turn for 2 minutes.
Sprinkle with parsley and serve immediately with mustard before the potatoes lose their crispness.
