Knead the flour, eggs, water, and salt into a firm dough that does not stick to the hand.
Cover the dough and rest it for 20 minutes.
Boil the sugar and water for 12 minutes, add the lemon juice, and keep the syrup hot.
Divide the dough into small balls and roll them very thinly with starch.
Sprinkle walnuts over the opened sheets, wrap them around the rolling pin, and pleat from both ends toward the center.
Cut the pleated rolls into 3 cm pieces and arrange them on the tray.
Drizzle melted butter over them and bake in a 180°C oven for 30 minutes.
Pour the hot syrup over the baklava from the oven and rest for at least 20 minutes before serving.
