Mix the mayonnaise and chipotle pepper sauce to make a spicy sauce.
Divide the ground beef into four patties without kneading and season with salt and black pepper.
Heat a cast-iron pan until it reaches above 230°C.
Sear the patties hard for 3 minutes per side.
Place Oaxaca cheese on the patties and let it melt for 1 minute.
Toast the buns on their cut sides for 1 minute.
Fill the buns with bean puree, chipotle mayo, patty, avocado and cheese, then serve.
