Cut the fish into large bite-size pieces.
Mix the turmeric, galangal, crushed garlic, chopped shallots, fish sauce, sugar, and 1 tablespoon of oil.
Marinate the fish and rest in the refrigerator for 30 minutes.
Boil the rice vermicelli according to the package and drain.
Cut the dill and scallions into large pieces.
Heat the remaining oil in a pan and cook the fish in one layer for 3 minutes.
Turn the fish, add half of the scallions and dill, and cook for 3 more minutes.
Place the fish over the noodles and serve with the remaining herbs, peanuts, mint, and lime.
