Peel the beets and cut them into small dice.
Cook the beets in a little water for 15 minutes, until tender, then cool.
Boil the eggs for 9 minutes, cool them, and cut them in half.
Finely chop the cucumbers, radishes, scallions, and dill.
Whisk the kefir, lemon juice, salt, and black pepper in a large bowl.
Stir the cold beets and chopped vegetables into the kefir.
Rest the chlodnik in the refrigerator for at least 20 minutes and serve with the eggs.
💡 Tip: Do not add the beet to the kefir before it is completely cold; warm beet curdles the dairy base and dulls the color.
