Tear the stale yufka into large bite-size pieces.
Mix the cokelek or lor cheese with chopped parsley, half the salt, and black pepper.
Melt the butter in a wide skillet for 2 minutes and add the yufka pieces.
Turn the yufka for 4 minutes to coat it in butter and crisp the edges lightly.
Beat the eggs with the remaining salt, drizzle them into the pan, and add the cheese mixture.
Cook the cimur for 4 minutes, stirring until the egg sets.
Sprinkle with red pepper flakes and serve straight from the pan.
