Knead the cornmeal, instant yeast, warm water, and salt. Cover and let rise in a warm place for 60 minutes, until doubled.
Dice the onion and saute it with the ground lamb in a wide pan for 8 minutes, then add the black pepper and stir.
Divide the risen dough into balls, roll each one into a thin sheet, and brush with the melted suet.
Spread the meat filling over the sheets and roll them loosely. Line a baking tray with parchment and place the rolls apart from each other.
